Iced Lemon Cake with Fresh Lemon Juice and Zest

This lemon cake uses fresh lemon juice and zest, with a simple icing on top.

Ingredients for iced lemon cake

This lemon cake uses simple ingredients that are easy to find in most supermarkets. You’ll need a few basic baking staples, along with fresh lemon juice and lemon zest. Below is a breakdown of the ingredients for both the cake and the icing.

For the cake:

  • 2 1/2 cups of plain flour (or self-raising flour for a lighter sponge)
  • 1 1/2 cups of brown sugar
  • 1/4 cup of light brown sugar
  • 1/2 teaspoon of bicarbonate of soda
  • 1 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 1 cup of whole milk
  • 4 large eggs
  • 2 tablespoons of lemon zest (for an extra lemony kick)
  • Juice from 3 lemons
  • 1 teaspoon of vanilla extract
  • 1/2 teaspoon of orange flavour extract

For the icing:

  • 3 1/2 cups of icing sugar
  • 2 tablespoons of olive oil
  • 3 tablespoons of hot water
  • 1 drop of vanilla extract

Step-by-step instructions for iced lemon cake

Now that you have all the ingredients, it’s time to get started. This lemon cake is straightforward to make, and you’ll have a cake ready to serve in just over an hour.

1. Preheat the oven:

Start by preheating your oven to 175°C (350°F), so it reaches the right temperature for baking.

2. Prepare the cake tin:

Next, coat the inside of your cake tin with non-stick baking spray. A round or square cake tin works well for this recipe. This stops the cake sticking to the tin once it’s baked.

3. Combine the dry ingredients:

In a large bowl, sift and whisk the dry ingredients together:

  • Plain flour
  • Brown sugar
  • Light brown sugar
  • Bicarbonate of soda
  • Baking powder
  • Salt

Whisking the dry ingredients mixes them evenly, which gives the cake a uniform texture.

4. Mix the wet ingredients:

In another large bowl, mix the wet ingredients:

  • Whole milk
  • Eggs
  • Fresh lemon juice and zest
  • Vanilla extract
  • Orange extract

5. Combine the dry and wet ingredients:

Slowly add the dry ingredients to the wet ingredients and whisk until everything is fully combined. Be sure not to overmix, as this can make the cake dense instead of light and fluffy.

6. Pour the batter into the tin:

Pour the batter into the prepared tin and spread it out evenly.

7. Bake the cake:

Bake in the preheated oven for about 40 minutes. Check it’s done by inserting a skewer into the centre of the cake. If it comes out clean, your cake is ready. If not, give it a few more minutes.

8. Let the cake cool:

Once the cake is baked, take it out of the oven and let it cool at room temperature. Cooling helps the cake set properly.

9. Prepare the icing:

While the cake is cooling, make the icing. Sift the icing sugar into a bowl, then add the olive oil, hot water and vanilla extract. Whisk until smooth. For a thinner icing, add a little more water.

10. Decorate the cake:

Once the cake has cooled, spread the icing evenly over the top.

Baking tips

  • Don’t overmix: overmixing the batter can make the cake dense. Mix the ingredients just enough to combine them.
  • Sift the flour: sifting the flour before adding it to the mixture avoids lumps and gives a smooth batter.

Final thoughts

Whether you’re baking for yourself or to share, keep the iced cake in an airtight tin.
