This latte pairs espresso and frothed milk with a homemade lavender and honey syrup.
A lavender and honey latte at home
Lavender turns up in teas, coffees and lattes. Some coffee shops now offer lavender drinks, and you can make one at home. Any espresso blend works.
This recipe gives you a coffee-shop drink without leaving home. Before making the latte itself, start with the syrup. The recipe uses espresso rather than ground coffee, for a sharper coffee taste.
Lavender syrup for the latte
Start with a simple lavender syrup made from three ingredients. Once it’s made, you can use it in the latte below.
Ingredients:
- Five spoonfuls of honey
- A cup of water
- A teaspoon of dried culinary lavender
Tools to use:
- A pan
- Cups and spoons for measuring
- A stirrer (a spatula or spoon)
- Any container with a lid to cover it fully
Step by step instructions:
- Put all the ingredients in a pan over a low heat. Stir gently until the mixture boils.
- Take the pan from the heat and let the mixture cool to room temperature. Once it’s cool, pour it through a fine-mesh sieve to remove the lavender pieces, leaving a smooth syrup.
- Transfer the syrup to a container and cover it tightly with its lid. Store it in the fridge and use it within three weeks.
You can make this lavender syrup in large batches and use it in other drinks such as lemonade or iced tea.

Lavender and honey latte
The latte is easy to make. You just need some of the lavender syrup you made above.
Ingredients:
- 2 spoonfuls of lavender syrup
- 1 ½ cups of milk (or a plant drink such as coconut, almond or oat)
- 3 espresso shots (use fewer or more to suit how strong you like your coffee)
- 1 teaspoon vanilla extract (optional)
- Dried lavender buds, to garnish (optional)
Tools to use:
- Spoons for measuring and stirring
- Mug
- Coffee machine
- Milk frother
- Pan and hob
Step by step instructions:
- Put 2 spoonfuls of lavender syrup in your mug.
- Use a coffee machine to make your favourite espresso straight into the same mug. Stir gently.
- Pour your milk into a frother to make a foam, then pour it on top of the mug’s contents. If you don’t have a frother, heat the milk in a pan over a medium heat and whisk it gently.
- Garnish the latte with a lavender bud (optional).
